Hearty Chili

This hearty chili is packed with ground beef, beans, and spices for a comforting meal that's perfect for cold days.

Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 bell peppers, chopped
  • 4 cloves garlic, minced
  • 2 lbs ground beef
  • 2 cans (15 oz) kidney beans, drained and rinsed
  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) tomato sauce
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp paprika
  • 1 tsp oregano
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper (optional)
  • 1 cup beef broth

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and bell peppers; cook until softened, about 5 minutes.
  2. Add garlic and cook for 1 minute until fragrant.
  3. Add ground beef and cook until browned, breaking it up with a spoon as it cooks.
  4. Drain excess fat if necessary, then stir in all the spices and cook for 1 minute to toast the spices.
  5. Add crushed tomatoes, tomato sauce, beans, and beef broth. Stir to combine.
  6. Bring to a boil, then reduce heat to low and simmer uncovered for at least 1 hour, stirring occasionally.
  7. Taste and adjust seasoning as needed. Serve hot with your favorite toppings like shredded cheese, sour cream, and chopped onions.
