Classic Meatloaf

This traditional meatloaf recipe is comfort food at its best, with a sweet and tangy glaze that makes it irresistible.

Ingredients

For the Meatloaf:

  • 1 1/2 lbs ground beef (85% lean)
  • 1 cup breadcrumbs
  • 1 small onion, finely chopped
  • 1 egg, beaten
  • 1 cup milk
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

For the Glaze:

  • 1/2 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper or foil.
  2. In a large bowl, combine all meatloaf ingredients. Mix gently with your hands until just combined - don't overmix.
  3. Shape the mixture into a loaf shape about 9x5 inches on the prepared baking sheet.
  4. In a small bowl, whisk together all glaze ingredients. Spread half of the glaze over the meatloaf.
  5. Bake for 45 minutes, then remove from oven and spread with remaining glaze.
  6. Return to oven and bake for another 15-20 minutes, or until internal temperature reaches 160°F (71°C).
  7. Let rest for 10 minutes before slicing and serving.

Recipe Notes

Storage: Refrigerate leftovers for up to 4 days or freeze for up to 3 months.

Variations: Substitute ground turkey or pork for half the beef, or add chopped bell peppers to the mixture.
