Fluffy Pancakes

These light and fluffy pancakes are perfect for a weekend breakfast. Top with maple syrup and fresh berries!

Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp white sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tbsp butter, melted
  • 1 tsp vanilla extract (optional)

Instructions

  1. In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg, melted butter and vanilla; mix until smooth.
  2. Heat a lightly oiled griddle or frying pan over medium-high heat.
  3. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.
  4. For extra fluffy pancakes, let the batter rest for 5-10 minutes before cooking.

Recipe Notes

Variations: Add blueberries, chocolate chips, or sliced bananas to the batter before cooking.

Tip: Keep cooked pancakes warm in a 200°F oven until ready to serve.
